Watermelon Cucumber Salad with Citrus Drizzle and Feta
This will be my new go-to salad for summer barbecues, potlucks and entertaining. It is so simple to make and looks gorgeous with its bright colors - not to mention it is refreshing and delicious! This salad is filled with water which can help to meet your hydration needs (which we can all use during the hot summer months) and watermelon is a good source of beta carotene, which our bodies can convert to vitamin A, as well as potassium. Whether you're serving a larger portion of this salad at a party or just enjoying it at home, I promise you will love it!
Ingredients (yields 2 servings):
1 C cucumber, chopped
1 1/2 C watermelon, chopped into small cubes (I like to make them the size of dice)
1/2 C feta cheese, crumbled
Juice from 1/2 lemon
1 Tbsp olive oil
1 1/2 tsp fresh basil, washed, dried and finely chopped
Dash salt and pepper, to taste
Directions:
1. Combine cucumber, watermelon and feta cheese.
2. Add lemon juice, salt and pepper.
3. Drizzle olive oil over salad and top with chopped basil. Mix and enjoy!
