Spicy feta dip is one of my favorite things to eat, so I've been perfecting this recipe and can't wait to finally share it with you! This simple dip has just a few ingredients and takes minimal time to make. It's delicious served with veggies, bread and pita, or as a topping for fish or chicken - and you'll probably want to make it with every meal once you try it!
Ingredients (yields 2 servings, or about 1/2 C dip):
4 oz feta cheese (I like to use feta made from whole milk for a creamier taste)
1/2 bell pepper
2 tsp extra virgin olive oil
1/8 tsp garlic powder
1/2 tsp crushed red pepper flakes
1/8 tsp ground black pepper
1/8 tsp salt
Nonstick cooking spray
Directions:
1. Preheat oven to 425 degrees Fahrenheit.
2. Spray baking sheet with nonstick cooking spray. Cut bell pepper into thin strips and place on baking sheet, skin side facing up. Roast pepper in oven until soft, approximately 10 minutes. Remove from oven and allow pepper to cool (about 5 minutes).
3. Place feta cheese in mini food processor or blender. Add oil, spices (garlic powder, crushed red pepper flakes, pepper, salt) and roasted pepper. Cover and chop in food processor or blender until dip is pureed, with a slightly chunky consistency (approximately 25-30 seconds). Place in small serving bowl and enjoy!
