This simple, 6-ingredient dish is the perfect game day meal (or any-day meal)! Whole wheat quesadillas, chicken breast and cheese offer a more balanced plate than fried buffalo wings alone and still deliver the heat and the flavor. It's also an easy, one-pan meal that comes together in no time and is protein-packed to help keep you full. Whether you need a dish for the upcoming Superbowl, or just a dish for one night this week, this game-day inspired meal will have the athlete and football fan inside of you cheering!

Cook Time: 35 minutes
Ingredients (yields 4 servings):
16 oz chicken breast tenders, boneless, skinless, raw
1 Tbsp oil (I like to use avocado oil)
1/3 C buffalo sauce (I like to use Noble Made by The New Primal Medium Buffalo Sauce)
1/2 onion, chopped
6 oz shredded cheese (I like to use a monterey jack/cheddar blend, but any cheese works)
4 whole wheat flour tortillas
*Optional 1/2 tsp garlic powder
Nonstick cooking spray
Directions:
1. Cut raw chicken into small cubes.
2. Warm oil in large pan over medium heat. Add chicken and buffalo sauce. Add optional garlic powder, if desired. Cook until chicken is mostly cooked, about 20 minutes, stirring occasionally.
3. Add chopped onion and cook another 5-10 minutes, until chicken is cooked through and onion is soft. There should no longer be a large amount of liquid sauce in the pan - it should coat the chicken and onion. Remove from heat.
4. Fill each tortilla with 1/4 chicken and onion mixture and 1.5 oz shredded cheese. Fold each tortilla in half. Wipe pan clean with paper towel (careful - it will still be hot!) or use a new pan or panini press to make quesadillas. Spray pan with nonstick cooking spray and place each quesadilla in pan, cooking until browned on each side, about 3-4 minutes each.
*I like to use my Cuisinart Griddler, which cuts the cooking time, since it cooks both sides at once!
